Do compensators actually work and would it help with my 1911?

It doesn't have to be high pressure, it could be higher volume of gas! I have experimented with different kinds of powders from my 9mm, 357sig, 40s&w, 10mm, 44mag and 45acp. Both standard and +p in 9 and 45. Changing spring weights also and finding a best for each. Each has been different, so it will be different for different models/manufacturers on each operation/function of your gun. The comp design will add to the factor too.
 
Not a compensator, but I will say that a ported 9mm definitely makes a difference, after shooting ported Performance Center Shield and a regular Shield side by side.

The Performance Center .45 shot pretty soft as well...but couldn’t compare it to a standard.

I think, for the most part, compensators do make a difference...just how much, and if it's worth it depends on the shooter.
