Pork Belly experiment #14...

So I really love to cook. I have tried to incorporate methods, flavors and ingredients from the countries we have lived in. This weekend it's Lumpia, homemade Ramen, sticky rice and Pork Belly. Working on the Pork Belly today. So I got the pork belly from the butcher, its just basically thick fat bacon, I put it in a double foil boat, put a quarter cup of Guinness in the bottom and lots of fresh herbs on top. I will bake it at 400 for 35 minutes. When I take it out of the oven I will put it in the big cast iron on the grill with Sweet Soy, Thai Chili, a bit of sesame oil and get it nice and brown. Then I will grab it out and toss right on the grill for a fire finish that will crisp it up a bit.

The finish will be chop it up to put in the ramen or pho or just on top of sticky rice...
