I suspect you might find an Elk brisket to be a little too lean to stay moist with this method. I've never personally tried it, (IE: Elk brisket low and slow) just going on experience in BBQ in general. Let us know how it goes if you try it.

Rubs come in all styles.. havent had a bad one yet .. but short cutting to pellets is a deal breaker ..I’m not Texan, but a coworker is a transplant, and makes some of the best brisket I’ve had...he’d scoff at the rub; he uses nothing but salt on his—not even black pepper.

I'm a native-born Texan living in Oklahoma and absolutely love briskit. I was served tritip when I visited family in California and said, what the heck is that. I thought something was wrong with the briskit.CORRECT...The only reason for a Mesquite Tree is to have wood for BBQ
I'm curious ..... do you subscribe to the "Texas crutch"?Rubs come in all styles.. havent had a bad one yet .. but short cutting to pellets is a deal breaker ..
I agree with every word you said here, but I'm still curious whether you use or subscribe to the 'Texas crutch' or not? I'm only asking because you're a Texas BBQ'r.Been doing bbq for 30 yrs. pork is my favorite , but brisket does just fine.
I run a half barrel smoker and use some recipes i picked up along the way... key to good bbq is know your smoker. If your not good mastering temp on your smoker, bbq will be mediocre
I do not. No foil involvedI agree with every word you said here, but I'm still curious whether you use or subscribe to the 'Texas crutch' or not? I'm only asking because you're a Texas BBQ'r.
