Finally got my smoker dialed in

Did some beef short ribs this past weekend. Turned out pretty good. The fan drive I built works great with the FireBoard 2 Thermometer and APP. Just changed the Firebox gasket, and still need to change the smoker chamber gasket. Working my way up to a brisket.

No, my wife bought it for me back in 2018. It is a Oklahoma Joe's 3n1 smoker/grill combo. Leaked like a sieve and couldn't hold consistent temps. Been doing mods to it, and they finally paid off. I am hoping to be able to build one, one day.
I have a Pitt boss that holds the temp very well I like it a lot . I will do some pork butt maybe chicken next doc says I need to cut back on the red meat which is my favorite oh well
 
Thank you. This was a compromise. I wanted a $2K to $3K smoker, but couldn't justify that price. My wife got this for me for Christmas. Nice thing about it is that I can grill and smoke at the same time for our family functions.
I have a customer in IL that spent $17k for his latest smoker...there is no limit to how much one might spend if you put your mind to it. Kind of like other hobbies we all have...

It was custom-built, about the size of a small car, several thousand pounds, had to be delivered to his home via LTL freight with a moffit...he just retired and is thinking of opening a "bbq" restaurant (I'm pretty sure that won't happen, but ya gotta have a dream). While stories like this make some jealous and inspire antifa-types, I've always thought we need more people like this to keep our economy rolling.
 
Been using an Oklahoma Joes reverse flow stick burner for several years. I purchased a Traeger pellet grill about two years. A couple friends said I should get a pellet grill but I was pretty skeptical. I recently smoked a 14 lb brisket, couldn't believe how good it turned out. Great smoke ring, nice bark, tender and juicy. The cook took almost 16 hours but didn't have to constantly check on the fire just add more pellets. That's a lot of ingenuity you put into your smoker.
 
I really regret throwing away my old charcoal fish smoker I only smoked salmon in it really stupid threw it out when I got my pellet smoker. I could never get that flavor back but it was a lot of work and time

I upgraded from a Masterbuilt to a Recteq pellet sometime in the recent past. Pellets are very versatile...maybe not the best pure smoker, but they do everything well (and some things better than all others). While I want try smoking salmon, I've heard from MANY that once you smoke fish, that smoker can ONLY smoke fish. Maybe the Masterbuilt that is collecting dust could smoke salmon well? We'll see.

Thanks, your reply jogged my memory. Forgot I had an old masterbuilt electric grill. It never worked great for me as you have to use wood chips in a small tray not much for smoke flavored meat.
