They can all hold optics. You just need to add the scope mount to it. They start at around $100 or so, from my recollection. It's a bit of a chore installing one, as you might have to file fit some of the pieces, but they work great.
 
Far easier to mount optics on an AR-10-type than a M1A.

All the M1A modles can have an optics mount mounted above the receiver. Some mounts are considered much better than others.

You can also replace the upper handguard with an Ultimak mount so you can mount either red dots or long eye-relief scout scopes.

Some models come from the factory with an abbreviated upper handguard mount for a red dot.

It all depends on what kind of optic you want to use.

On an extension, get a long eye relief and some have a pic rail in front of the receiver. The 1 you attach to the side will take some skill/knowledge, but good luck and good choice on a m1! What barrel length and other perimeters are you looking for?

I am looking to buy a .308/7.62 and am looking at the M1A series but I need some advice. Outside of the match series which M1A can hold a decent set of optics?
All can hold optics as long as you get the optics adapter. There are a bunch out there and they all a bit different. SA makes the best in my opinion and they like your wallet! Once you have the adapter installed ..look as what you want to do and what kind of range zoom wise you want. I own a SA M1A precision.. and i do love it. My adapter lets me still use iron sights as well. I paid about 90 for a mount. Still working on sighting a scope though.. i bought this scope

I love how it was shipped and it comes in a case with a tons of stuff to.

As for comparing and AR-10 to a M1a well there are a lot less working parts on the M!A and so much easier to work on.

Mine accepts any optic and aiming device that would be at home on an AR-10, the long site plain (LSP) optic rail modernizes any M1A that has a standard weight barrel.

I was going to suggest, there are "tactical" stocks for the M1A that would provide the flexibility of the picatinny rail, not sure if the OP wanted to keep an original wood stock look.

I swear looking at Maryland's Gun Ban law from a few years ago, the few M1A's in modern tactical stocks is the only reason they banned the M1A, while noting in the law, that doesn't include the M1 Garand, is because the law makers saw a few M1A's in the modern tactical stocks and declared that is a scary assault weapon, merely on how they look.

M1A is definitely NOT easier to work on than any AR platform. It's not even a competition IMO.
Took me over an hour to figure out how to remove and re-install the op-rod on my first attempt. Man that was a bear to figure out. Didn't help with all the tube videos glossing over this most-difficult process for an M1A newbie with a brand new-out-of-the-box rifle (tight-fit). Good thing that's a process that is not done after every shoot...
