My friend John who cooks squirrel suggests seasoning the meat with whatever seasoning you prefer and wrapping it in tinfoil with the vegetables of your choice and cook it in the oven at a low temp around 250 degrees for 2hrs. John says that squirrel meat can be tough if its cooked too fast.

Red Squirrels are very tough. Greys , not so much.
 
Many years ago I took about 20 squirrel legs, brushed them with bbq sauce and grilled them on a charcoal grill.
When my wife came home from work I told her that I made chicken wings, all drummies.
She loved them! When I told her they were squirrel legs, she freaked out on me.
After she calmed down she said that she couldn’t tell the difference between them and chicken.
