Martensitic stainless steels (which have a ferritic microstructure) are magnetic. Austenitic stainless steels contain nickel and are non-magnetic. But, during processing the permeability of austenitic steels can change. While non-magnetic when freshly formed, 300 series stainless steels, which are austenitic, typically becomes magnetic after cold working and welding increase the amount of martensite and ferrite respectively in the steel.
 
Short answer:
Some types of stainless steels are magnetic which is all dependant on the type of alloys used in making the stainless steel.
Correct most stainless from offshore will not have as much chromium in it and it's magnetic. Most U.S. stainless I've had the experience with is non-magnetic. This is what I've been told by folks who work with stainless steel. To be honest I'd have no idea if a strong electric magnet would pick up U.S. stainless.
 
Anyone have a recommendation for a brass cleaning additive for the crushed walnut media?
My advise (FWIW) is to stay simple and use a vibratory tumbler with crushed walnut media. Someone already mentioned Dillon's media additive. It works great and smells good too. Don't get all billed up in all the new sophisticated brass cleaning equipment. Remember you only want to clean the brass not see your face in it. Save your $$$ for bullets, primers, and powder (if you can find any!).
