Which color grips for a gray 1911?

Its all a mater of personal preference.
I tend to like grips that more or less blend in or at least don't stand out. I'm fond of nice wood. Bright colors on guns tend to attract unwanted eyes.

I’d go for the second; that’s similar to the Wilson “Sunburst” grip, which is really nice.
