A "Go To" on game day. Line medium salad bowl with bacon overlapping each slice. Drop boneless skinless chicken thigh on top. Add pepper jack cheese and half a jalapeño. Close with bamboo skewer and smoke at 275 for about an hour. Baste with fave sauce. Pour yourself an ice cold beer and enjoy.
