Sorry, but as soon as I read 'lean organic' thighs, I was cautious ... then the 'organic corn nibblets' 'organic apple juice' did me in. I'm a southern boy who likes a little fat around the bone for flavor, and "lean" just don't make that!!! But thanks for the thought! I'm guessing the final word "enjoy" was rhetorical???

A "Go To" on game day.
Line medium salad bowl with bacon overlapping each slice.
Drop boneless skinless chicken thigh on top.
Add pepper jack cheese and half a jalapeño. Close with bamboo skewer and smoke at 275 for about an hour. Baste with fave sauce.
Pour yourself an ice cold beer and enjoy.

And…they’re done. Not the prettiest things in the world, but they do smell good 😊

Don't scratch any itches after cleaning the jalapeños...

I do them this way regularly...I use at least 2 strips of bacon on each popper and encase the pepper with bacon, hence my big fat belly. Baking varies...I keep em in the oven till the bacon is dark and done.

Best part is scraping the cream cheese that oozes out of them off the baking sheet. Them's good eats.

But why oh why the "boneless, skinless'? That's where all the real flavor is. If it''s for health reasons, OK. I can go along with that. But if it's just 'piggin' out' junk food, I want the flavor!an eating problem. Here where we live, we have a state fair once a year, and a county fair a couple times a year. The wife and I never miss either one, just for the junk foods!!

But don't misunderstand, I'm a firm believer in 'To each his/her own'. I've been real lucky all my life to have never had an eating problem. My metabolism is high enough I can eat anything I want and not gain a pound. And I have a cast iron stomach ... I can sit on a 3 day dead pig and eat a burger and not have an issue.
