Anyone else into cooking?

Took a day off work (burning some vacay, don’t want to max out and lose any…); said I’d cook.

Peanut butter pork roast in the crock pot; roast up some sweet potatoes, maybe steamed veg or a salad.

You peaked my interest...I've been making a peanut butter-based chicken recipe for years (kind of asian I suppose) and have not seen many recipes with meat (of any type) and peanut butter...might do some internets perusing...

Pretty straightforward…

2-3# pork roast
1 onion cut into rings (I like sweet yellows—Walla Walla, Vidalia, etc…)
1/4 cup soy sauce
1/4 cup brown sugar
3T white wine or rice wine vinegar
2-3 cloves garlic
1/2 cup peanut butter

Put onions on bottom of the crock pot (saving a few for on top of the roast), put the roast on top, salt & pepper roast, mix together the rest and pour over. Low for 6-8 hours. Garnish with roasted peanuts & lime juice.

I’m serving it with sweet potatoes.

Leftovers make a great sandwich with a little Cole slaw & hoisin sauce (or gochujang/korean bbq sauce)

That...looks intriguing, and I can almost imagine how it would look when it's done. I can't quite imagine the flavor, so thank you for including your recipe. I know what we're having for dinner at least one night during my time off for the holidays 🙂

I like peanuts
Not a fan of peanut butter

Asian dishes with peanuts are fine.
Butter form, or PB&J.. bleh
Not a fan of grape jelly. Good god that’s horrendous
 
I'm not a fan of asian food but I will say peanut butter with jelly, any flavor, was like filet mignon in the field when you were starving. I actually got 2 peanut butter and jelly sandwiches for a Christmas dinner while guarding aircraft in a alert facility in New Hampshire when I was a Security Policeman.
